Primary Responsibilities
- Maintain adherence to the culinary standards established by the Head Chef.
- Review daily preparations, cooking processes, and food presentation.
- Coordinate the efforts of all Cooks to ensure smooth food service operations.
- Collaborate in menu planning, daily specials, and promotional offerings.
- Forecast food needs and prepare purchase requests for approval.
- Assess the quality and quantity of food deliveries and inventory.
- Create schedules and manage annual leave arrangements.
- Monitor costs by reducing waste and overseeing inventory levels.
- Provide training, mentoring, and performance evaluations for staff.
- Assist in organizing and facilitating staff training sessions.
- Ensure kitchen equipment and tools are clean and operational.
- Promote kitchen safety measures to avoid accidents.
- Innovate by introducing new dishes, decorations, and service techniques.
- Conduct culinary trials and develop recipe documentation.
- Maintain consistency by following standard recipes.
- Coordinate with the F&B Executive on daily plans and special requests.
- Undertake standard supervisory tasks and additional assignments as directed by the Head Chef.
Requirements
- NITEC qualification in Asian Culinary Arts or equivalent.
- A minimum of 5 years of experience in a fast-paced environment.
- Well-versed knowledge and good understanding of hygiene, health and safety practices and regulations (HAACP, H&S regulations)
- Have initiative, hard-working and have the ability to lead
