Job scope
The Food Menu Development Manager is responsible to evaluate, propose, test & implement new Japanese dining food menu products in consultation with each Brand’s respective stakeholder under the Group. These menu items could be short-term promotional items or as part of each respective brand’s core menu.
Summary of essential job functions
- To design, plan and implement the standard flow of the Group’s new product development.
- To prepare and spearhead regular menu tasting workshops with Marketing & Operations for upcoming promotion and menu rotation.
- To manage and prepare the standard food cost for pricing review and analysis.
- To build up the product library and recipe management system for the Group’s business development.
- To collect and communicate with Marketing or stakeholders about market trends and consumer preferences
- To review and analyse the promotion results to determine the key success factors for each new product
- Build and develop the Food Research and Development function in accordance with the Company’s needs
- Assist in ad-hoc assignment as required
Minimum requirements
- Degree in Food Science. Candidates with strong chef background in creating new recipes are also favourably considered.
- At least 5-8 years of working experience in a similar capacity in the food/catering industry (experience in Japanese cuisine will be an added advantage).
- Sound knowledge in R & D in Food/Catering industry
- A natural leader, highly communicative and self-motivated to lead and motivate staff.
- Quality-driven with good understanding of local food and beverage trends.
- Trained eye for detail and customer centric.
- Ability to work in a fast-paced environment.
